Grab a cocktail shaker and combine your blackberries, mint, lemon juice, and honey. Muddle ingredients together to release the juices and then pour in your bourbon.
Pour a bit of cane sugar into a shallow plate and add a zest of half a lime to sugar. Rim your glass with lime juice and then press down the rim into the sugar and lime zest mixture. Add ice to the glass and pour in your cocktail shaker mix. Top with sparkling water and garnish with mint.
