Monique Kilgore’s healthy summer treats

Ice cream, slushies, popsicles, oh my! What would summertime be without having these popular frozen treats to cool down with.

The Bad News: They’re often packed with loads of sugar, artificial flavors, fat and other waistline wrecking ingredients. The Good News: I’ve “skinnied down” some of those classic, frozen summer treats making them healthy, easy to make and downright irresistible.

Banana Ice Cream

Did you know that frozen, blended bananas make perfect creamy, faux ice cream? You’ll hardly believe you aren’t eating real thing with this easy recipe.

INGREDIENTS

2 frozen bananas, sliced

1 Tablespoon coconut milk

Dark chocolate syrup, nuts (optional garnish)

Add frozen banana slices and coconut milk to a blender. Blend until creamy and smooth. Place mixture into a freezer safe container. Freeze for 1 hour or until firm. Serve plain or topped with dark chocolate syrup and nuts. Enjoy.

Real Fruit Popsicles

There’s no denying it , popsicles are just plain fun to eat, especially when it’s scorching outside. These real fruit popsicles are easy to make, pretty darn cool looking and they can pack a full serving of fresh fruit!

INGREDIENTS

Light colored juice or flavored water

Diced Fruits (peaches, kiwi, strawberries, etc.)

Fill  popsicles molds half way with juice or flavored water. Fill molds with diced fruits. Add more juice or water if needed. Freeze for 3 hours or until completely frozen. Run popsicle molds under warm water to loosen the popsicles. Enjoy.

Watermelon Slushies

You’ll want to stock your freezer with bags of frozen watermelon chunks once you taste this refreshing watermelon slushy.  With just 2 ingredients, it comes together in seconds and is just as refreshing and delicious as those artificially flavored, sugar packed slushies.

Watermelon, diced

Juice (optional)

Freeze watermelon chunks in a single layer. Once frozen place the watermelon into a blender. Blend until smooth and icy. Add a drop of juice if needed to make blending easier. Serve immediately. Enjoy
